A quick way to separate the yolk of an egg from the white is to break the egg into a funnel set over a glass. The white will pass through while the yolk will remain in the funnel!
The simplest way to accomplish this task is to crack your eggs into a bowl. Reach into the bowl and gently scoop out the egg yoke with your hand letting the whites run between your fingers. the yoke will stay in your hand. transfer the yoke to your other bowl and repeat.
