I got intrigued by low-carb dieting a few years ago, but never took the plunge. What's been your experience?
I travel on business about 50% of the year so when I eat out I just order protein with veggies instead of meat. At home I cook large portions of meat like London Broil or Chicken recipes so that I can eat it all week long. I keep my freezer stocked with frozen veggies like cauliflower and green beans. Breakfast is usually some kind of omelet. There are times, however, that I just cannot step away from the pie or the pasta so occasionally I take a carb interceptor with an ingredient called Phase 2. It blocks the carbs I eat from being absorbed and it seems to work as I am still losing weight. I only do this maybe once a week because I have noticed that when I eat carbs I start to crave them more. I am looking forward to trying the low carb recipes here and contributing as well!

Have you tried Dreamfields Pasta? I notice no glycemic reaction from it. You are correct about the cravings. If you stay away from carbs, you'll only crave protein and veggies! The same is true about sugar. If you totally remove it from your diet, after a while even celery tastes incredibly sweet.
When I make salads I make enough for 2 or 3 and store the rest in a plastic bag. I always make sure I have eggs on hand. I usually buy 2 dozen and boil half of them. Egg salad wrapped in Romaine Lettuce leaves is a quick and easy snack and also makes a great light meal. You can do the same thing with leftover meat. Mashed potatoes is one of my weaknesses but Mock Mashed Potatoes using cauliflower, Parmesan cheese and butter tastes almost the same!
