Subject: Meat raises insulin more than whole grains?

I was just reading a couple of interesting posts over at fanaticcook.  She's a nutritionist who continues her education by reading the scientific literature.  And she's pre-diabetic.  She's had much better success controlling after-meal glucose spikes with a diet high in whole grains, fruits, and vegetables and lower in proteins and fats than she had with an Atkins-like low-carb diet, and is now studying the evidence that this is true for many other people.  The studies she has presented (in her postings and in the comments) seem to mostly apply to PREVENTING diabetes.  Still, the studies have interesting conclusions.
 
If these findings also apply to people who already have diabetes, this could make a big change in the criteria for "diabetic friendly" recipes.

I'm new to BigOven and I'm happy to find this Diabetic Recipe Group.
 
This topic jumped out at me and I have to share what's worked for me over the last 16 months.
 
I was diagnosed type 2 last year and since that time I've lost 160 pounds and have dropped my A1c from 13 to 6.0 eating a high fiber and controlled carb diet. Which basically means if a carb enters my mouth, it's got lots of fiber already attatched.
 
I eat whole grains, legumes, fruits with skin on, potatoes with their skin etc. I also use portion control but no food is off limits.
 
About the only thing I've cut out of my diet is refined and overly processed foods, but I will still grab a bean burrito at Taco Bell on occasion

Congratulations on your loss both in weight and A1c.
 
I've just read Dr. Barnard's book on reversing diabetes with a "good carb" diet.  Partly because I've got some diabetic relatives but mostly because I've recently learned that what's good for the blood sugar is also good for the heart, even if I am not diabetic.  Where did you go to get started with your new eating plan?  And, since you enjoy taking pictures of dishes you've prepared, can you post some recipes and photos?
 
I'd love to see more about what has worked so well for you.

wow...this is news to me

Although I am trying to reduce the amount of meat in our diet, this is a real surprise.  A Dr. just diagnosed a friend as borderline diabetic and advised her to reduce her red meat intake.  I thought he was nuts, but....???
