Dinner on Christmas Eve is ever changing, but always served buffet style. Two years ago we had a swedish buffet. Last year a mexican buffet. This year it will be all about seafood.
 
Dinner on Christmas day is a little more formal with a spiral cut ham as the main entree.

That's a great idea, to make a tradition out of the buffet / theme.  I like the idea of a help-yourself style buffet. 
 
To generalize, it seems to me the "constraints" for Christmas-day eating are things like:
  • Needs to be flexible in timing
  • Needs to be "scaleable" up or down for drop-by-guests or change in plans
  • Needs to be purchasable at least 2 days in advance
  • Ideally some make-ahead component(s) to ease the craziness of the day
  • Comfort food is always welcome on days like this

Buffets and help-yourself-eating are really great options for things like this.
