Does anyone know a good quick and easy source for the sauces they put on Chinese foods? For instance, when I go to the Chinese restaurant - and we have a good one here in this small town - I always order "Dragon and Phoenix". I would like to know how to make a simplified version of this - I think the flavor comes mainly from the sauce they add to the chicken and/or shrimp. Thanks.
Is it a sweet, clear sauce, or a brown earthy sauce? What flavors can you taste? What color is it?
I wanted to learn about all the different sauces they use in a simplified way. I know they use various pastes that you can generally find at the grocery store. I have used the brown, earthy one - that is my favorite (but I can't think of the name of it now of course . ) But I would like to be able to make a simplified version of several of the Chinese dishes. My husband likes the lamb dishes - I favor the chicken, beef, and shrimp dishes.
I see -- here's a good link with an overview of many of the classic chinese sauces. You can then search BigOven for specific sauces once you know the style (e.g., "black bean sauce", etc.)
i'm also a big dragon and phoenix fan and would love to learn how to prepare it. it taste like an orange and chilli sauce thinkened with cornstartch.......delicious
i have tried to duplicate the sauce myself and had a descent result but not quite there. i started with a small can of frozen concentrated orange juice which i reduced then added some asian chillie garlic sauce and thickened with the cornstartch
this is a pretty good place to start if you feel like experimenting a bit.
