Subject: The Avocado Cake

I was watching Alton's show "Good Eats" last night and I watch in shock as he made a cake with Avocado frosting! I'm Puerto Rican so as a Latin person we only use Avocado's in salad. It was a little strange to see if turned into something sweet. I'm not sure if I would dare try the recipe.

I just love his show.  So informative and fun.  Haven't seen the Avocado frosting recipe but it sounds intriguing for Cinco de Mayo.

Avocado Buttercream Frosting

Ingredients

  • 8 ounces avocado meat, approximately 2 small to medium
  • 2 teaspoons freshly squeezed lemon juice
  • 1 pound powdered sugar, sifted
  • 1/2 teaspoon lemon extract

Directions

Peel and pit the avocado. Place the avocado into the bowl of a stand mixer fitted with the whisk attachment along with the lemon juice and beat until lightened in color, approximately 2 to 3 minutes. Add the powdered sugar a little at a time and beat until smooth. Add the lemon extract and mix to combine. If not using right away, store in the refrigerator.



What type of cake did he frost with this?

He does not say what type of cake he is using in the episode but it can be used with Pumpkin cake, Carrot Cake, Spice Cake,  and Lemon cake (since one of the main ingredients in lemon juice). I suggest making cupcakes with different flavors and topping them with the icing. It will make for an interesting taste test that I'm sure everyone will enjoy.

I saw him make this frosting live at a book signing a couple of years ago.  He picked a random little kid out of the audience (about 5 years old) to test it for him, who gave him a big thumbs up.  I mentioned it to some of the girls here at work and they were skeptical - so now I really want to make it and show 'em!!

I know it sounds weird.  But was also watching Chopped (I know, wrong group here) and they sweetened avacado for the dessert round and it seemed to turn out really well.

My sister makes avocado ice cream!  I have to say it was "ok", but not something i would crave.
