Subject: Training/Developing Taste Buds

I am fairly new to vegan eating and it is proving a difficult task. I can find plenty to eat, but I feel completely deprived if I can't make everything I eat taste wonderful.
 
Afte a lifetime of cooking with meat, the tastes of some foods are disappointing to my "meat-trained" tastebuds. While I am discovering subtleties of taste I never dreamed possible, I'm still working on making a vegetable soup I like without meat broth or bouillion.

I have never been a vegan, but I know what you are talking about.  You may be missing that "meaty" flavor the Japanese call umami.  I've read this flavor is related to glutamate content.
Try adding mushrooms..  Grilled portobello mushrooms are very satisfying, and ordinary white button mushrooms make a great addition to soups and sauces.  http://www.umamiinfo.com/umami-rich_food/ has a list of umami-rich vegetables.  Miso has some of that flavor, but is really salty.  Some nutritional yeasts and yeast extracts have it, too.
