Check out George Stella's recipes (www.stellastyle.com). I love his Anaheim Shrimp Scampi (shrimp sauteed in a bold and flavorful scampi butter, tossed with avocado, asiago cheese, and spaghetti squash). Tequila chicken is another good one (chicken breast coated with fresh cilantro and spices, baked, and then finished with a generous helping of shredded cheeses).  Mock Fettuccine Carbonara made with spaghetti squash is out of this world.

Stella has many other recipes that I love and make regularly. I hope to begin posting my versions along with photos soon. I also like Dana Carpender's recipes. From my own kitchen, I enjoy my eggplant and zucchini lasagna, pecan crusted catfish or chicken.

Tonight I'm preparing a really easy tomato pesto (fresh grape tomatoes, basil, almonds, lemon juice, and parmesan) and serving it with Dreamfield brand spaghetti. It's supposed to have relatively low glycemic impact. This is the first time I'm making this kind of pesto and using a Dreamfield product. If it all turns out well, I'll be sure to post the recipe and a photo on this site.
