Subject: ham

Hi,
Excuse me for my ignorance but, what makes ham, "HAM", rather than just a leg of pork. When I buy a leg and roast it, it never comes out 'hammy' or pink, it's greyish colour!

In short, ham is the butt and shank portion of pork.  Ham is almost always cured, whereas a roast lamb is cooked in an entirely different manner.
