freshwater shrimp

I see more and more often, freshwater shrimp offered at the seafood counter, and I would like to know what differences there are between fresh and salt water shrimp ( besides cost). If anyone can enlighten me I'd be grateful.

My Favorite

Out of all my favorite recipes here on B.O.  I have to say that the Chesapeake Bay Pasta, Chicken and Shrimp is my favorite (along with my next door neighbor's).  I make it fairly often.  It's easy as can be, and by the time the pasta is done, so's dinner.

I have been known on occasion to leave out the chicken completely and use all shrimp.  Either way, it's fantastic.

Freshness tips

When buying fresh fish, here are some quick tips:
  • Fresh fish should never have a "fishy" smell.
  • Eyes should be clear, not cloudy
  • The feel of the scales should never be slimy

If you're just starting out, be sure to ask your seafood department if the fish is frozen or caught fresh, and whether it's farm-raised or caught in the wild.  Then, pay close attention to the taste and texture.
