I posted my standby fried chicken recipe for those days when I want fried chicken, but not the work of fried chicken.  Kids love it.  It's so easy too. 

Chilli Recipe

I don't know why it took me so long, but this is the ultimate Lazy Chef's Chilli Recipe. It doesn't take much time at all.  Uncle Don's trick is not to drain the cans. PLUS it's really good. It makes a big pot and this weather is a great time to try it. Freezes well, too. Hope you enjoy.
 
I tried it recently adding chicken stock instead of the juice from the kidney beans, but it wan't much different...

Hi everyone, I'm Sue and I've been a member but have been lurking and  shy.
It;s time to come out of the shadows. Thanks for all the great ideas and I look forward to more in the future. I have a real challenge my hubby is wheat free!
I'm getting pretty good at adapting recipes or coming up with my own. I have a son that is wheat free also but, he's in college right now. Sue

Just added Herbed Baby Carrots recipe

This is very easy, as those baby carrots are already peeled and washed.  I was hungry for carrots and this made a tasty dish, but only about 2 servings.  Double the recipe if you're cooking for a group.  The herbs and seasonings can be altered to suit your taste.

Joined BigOven a couple of weeks ago, but then my computer broke.   I haven't really had much of a chance to be on much, a little here and there using other computers.
 
Anyway, I thought this group sure fits me.   Sometimes I really like to go all out and other times just like to get quick good food on the table.  I'm going to go check out some of the recipes posted.

Hi all - new to group!

Just a short explanation of why this group was appealing to me.  I tend to be a "lazy chef" when I have to plan and prepare meals for 6 nights out of the week, plus additional meals on weekends and holidays.  After a long day at work, it's sometimes tough to find ideas that won't keep me in the kitchen all evening and even tougher to be inspired at times.  I hope to find some great new ideas here.

Somewhat fitting, I guess

It's somewhat fitting that the only group of the 18 or so here on BigOven at current writing that doesn't have a logo... is called "The Lazy Chefs". 
 

I Confess

Okay, I take retirement seriously, and while I want to eat well, I don't want to spend my life in the kitchen (although my new kitchen is so gorgeous, I probably could).  So, I look for recipes that are quick to fix, don't require tons of prep time, yet are simply WOW!!  The Chesapeake Bay Pasta Chicken and Shrimp is the perfect example of this philosophy.  I wish I could lay claim to having posted it, but I can't.  I will say though, that it's one of my absolute favorites here, and I get requests for it constantly from friends. 

So, get the water for the pasta on to boil, and by the time that pasta's done, you'll have a fantastic dinner.
