hi every one im having a problem serving 20 to 30 seniors ham dinner for thanks giving

 ham is precooked  with bone in each is about 10 lb cooking 4 of them

QUESTION   im wanting to use wine in the cooking  also making a pineapple glaze  i have never done this befor please help ne
