| Try over cook rather than undercook potatoes

| I don't have a large family to feed, and didn't have any guests, but LOVED these. I am not an egg master, and my omelets never look like they should. These were easy, fun, and nice that we were both able to make it the way we like it and still eat at the same time!

| It took a lot longer in my oven than the recipe called for. It took 45 min in my oven at 350. Make sure the butter and sugar mixture is mixed until fluffy. This seems to be a key part of the recipe!
Thanks many people enjoyed this recipe!

| Delicious! I made it for brunch and my guests loved it and wanted the recipe! I also added chocolate chips in the middle and it was great. Will definitely be a regular in my household - easy and delicious! Thanks!
