Any help would be great!

My boyfriend grew up eating great cajun food made by his step dad....  He isnt around to ask for recipes....  I am really interested in Red beans and rice, dirty rice, jambulaya, and ettofee...  I am sure I spelled it wrong...   Any recipes would be great!  Thanks in advance!

I lived in Louisiana for a few years.  Here is the link to Emeril's Dirty Rice recipe, it's the best one I've tried.

I'll post a red-beans-and rice recipe that is a favorite around here (south Louisiana) and pretty easy if you can get your hands on liquid crab boil! It's awesome that you want to learn to cook "his" way! ;)
