Looking for Toasted Coconut Pudding for my poppy seed cake

Help!  My favorite poppy seed bread/cake receipe from my grandmother calls for toasted coconut pudding.  I'm hearbroken to learn the pudding is no longer made.  It was the key ingredient!  It separated this recipe from all the others.  Any suggestions on what to use for a substitute that will bring the same moist and tasty results?
