School LunchI have 3 children, ages 11 - 17. Although none are picky eaters, each one has specific likes and dislikes (like the rest of us). :) By far, their favorite lunch is also so easy to make! Grab a package of burrito flour tortillas (the burrito size works best -- the smaller ones aren't enough and are more difficult to wrap), a package of their favorite sliced meat (we really like Boar's Head Everroast Chicken and Honey Maple Glazed turkey, but the presliced deli chicken and turkey meats are hits, too), romaine lettuce hearts (I buy the package of the prewashed, organic because the strips are long and the lettuce is better suited for wraps), favorite sliced cheese (we like the Publix brand muenster cheese, but asiago or plain havarti also tastes great, either from the deli counter or the prepackaged). If I have extra precooked bacon on hand, I sometimes throw a few slices into the microwave to add to the wraps. You'll also need some sort of mustard with a little bit of kick -- Boar's Head Deli mustard is good, Publix brand spicy mustard is good, too -- and mayo. OK. Meat, cheese, lettuce and condiments. . . . you're ready to go. Line up however many wraps you want to make -- my 2 youngest kids take 1 each; my 17-year-old son takes 2. Spread a VERY THIN layer of mustard & mayo on each tortilla. Place 2 or 3 slices of meat in the middle; add 1 or 2 slices of cheese; add lettuce; if you're adding bacon, I add it here. Fold over the sides of the tortilla and roll it up. Wrap it in plastic wrap and/or foil. Toss in a fruit -- a banana, apple, small cherry tomatoes or prepackaged container of applesauce or mandarin orange slices (don't forget to add a plastic spoon), a bag of favorite chips/cheese nips, etc. and you're done. (We buy our milk and water at school). These are really easy and quick to make, they're healthy and, best of all, they're eaten . . . my kids even tell me that their friends want them to bring extras for THEIR lunches! :) It may take a couple of tries to get the hang of rolling the wraps if you've never done them before, but it's pretty easy to do -- if you have trouble, stop by your local Taco Bell and ask them to do a quick demonstration.
