About me

I am not a very good cook, let's get that up front! lol. But I do love to try the ones that I know I will like. I am supposed to be utilizing a low sugar diet for my Type I Diabetes, a low salt diet for my Kidney transplant and a low fat diet for my heart diseases. Now, you're reading that and asking, "What, can you only eat crackers and water? No, cuz crackers have salt on them, lol. Actually I don't follow the diets so that I hate eating, I adjust and tweak here and there. If I have to take a little bit more of an insulin shot to accomodate the carbs and sugar, so be it. I make very sure tho not to use salt as I got this kidney as a gift from someone who had to die to donate it to me and my main goal in life is to take care of his kidney for him. And that is why my Diabetes is under such tight control too. No, I'm not a health freak, I do believe in moderation. When I see people drinking diet Coke while eating fatty, fried foods and they cry "I can't lose weight!" my sympathy ends for them. I took Prednisone to keep my kidney going and that drug is great however you will gain weight on it. I gained 100 pounds and when I convinced my doctors to get me off that drug and onto another one, I had to work very very hard to get that weight off of me that was drug induced. I'm here to tell you, it can be done! Ok, I'll put the soap box away now. How's that for a novella?

My Favorite Foods

I love steak, corn on the cob, Mexican food as long as it isn't spicy, I'm a wimp. I drink iced tea 24/7 no matter what season.

I do NOT like pasta, yuck, it's dough, you're eating dough! I strongly dislike mayo too, lol. Yuck to mustard. I think it's easier for me to list things that I don't like!
