Detailed preparation: <p>1-3 days before:</p>
<p>Make lime-cilantro dressing by combining all ingredients except cilantro in a blender. Process until creamy, then add cilantro and pulse quickly. BigOven Tip: acid-based salad dressings keep longer in the refrigerator than most homemade salad dressing. This dressing can be made several days ahead, as long as cilantro is fresh.</p>
<p>Day Of:</p>
<p>In the morning:<br />Make marinade for chicken and let marinate. BigOven Tip: Chicken can marinate for 20 minutes to a full day, just be prepared for a slightly more intense flavor. Make sure to put in the fridge if marinating for over 20 mins.<br />One hour before:</p>
<p>Cut up fruit for fruit salad. Make dressing and mix into fruit salad. BigOven Tip: Letting the fruit sit in the dressing for up to an hour will enhance flavor. Do not prepare more than an hour before though, or fruit may get soggy.<br />Slice squash, pat dry, and season.<br />Grill chicken, set aside to cool.</p>
<p>20 minutes before dinner:<br />Assemble chicken salad.<br />Grill squash, place on upper rack to keep warm.</p>
