1 cupMint leaves; tightly packed
2 tablespoonsJalapeno; finely chopped
2 tablespoonsOnion; finely chopped
1/2 teaspoonFresh ginger; finely chopped
4 teaspoonsLemon juice
3 tablespoonsAlmond butter
Salt; to taste

Indian Mint Pesto Preparation

Combine all the ingredients in a food processor and puree until the mixture is smooth, for about ten to twenty seconds.

Yield: 1 cup (250ml)
