1 2.5-pound Broiler-fryer chicken; (up to 31/2 lb), cut up
1/4 c Margarine; or butter; melted
1/8 ts Pepper
1/3 c Grated Parmesan cheese
1 c Quaker Oats, uncooked; (quick or oldfashioned)
1/2 ts Paprika
1/2 ts Salt; optional
1/3 c milk

Preparation

Heat oven to 375 F. Place dry ingredients in blender container or food processor bowl; cover. Blend or process about 1 minute, stopping occasionally to stir. Coat chicken pieces with oat mixture; dip into milk. Coat again with oat mixture. Place in 15x10-inch jelly roll pan; drizzle with margarine. Bake 55 to 60 minutes or until juices run clear when chicken is pierced with fork.
