| 2 Zucchini; sliced 1/2 " thick |
| 2 Yellow squash; sliced 1/2" |
| 1/4 tsDried oregano |
| 2 Onions; diced |
| 1 tbGarlic; finely chopped |
| 8 ozLow-sodium tomato sauce |
| 3 ozMozzarella cheese; grated |
Italian Vegetable Casserole Preparation
Preheat oven to 350 degrees. Saute zucchini, yellow squash and onion with butter and garlic. Add oregano and tomato sauce; simmer for 5-7 minutes.
