|2 lgPotatoes -- pared & cubed|
|4 cBoiling water|
|1 lbBeef stew meat -- cut in 1"|
|1 tsCurry powder or Berbere|
|3 mdCarrots -- pared & sliced|
|1 cBoiling water|
|3 Ribs celery -- cut in 1"|
|1/2 lbBrussel sprouts -- fresh or|
|2 tbVegetable oil|
|1 cCorn -- fresh or frozen|
|1 cDried beans|
|1 1/2 tsSalt|
|1 lgOnion -- chopped coarsely|
Kenyan Bean Stew Preparation
Add beans to boiling water in a 3 qt saucepan or dutch oven; boil for two minutes. Remove from heat and let stand covered for one hour. Brown meat in hot oil; add onion and cook until brown. Add meat and onion mixture and all other ingredients (except Brussel Sprouts) to the beans; add one cup boiling water.
