Frozen
2 lgPotatoes -- pared & cubed
Slices
4 cBoiling water
1 lbBeef stew meat -- cut in 1"
1 tsCurry powder or Berbere
3 mdCarrots -- pared & sliced
1 cBoiling water
3 Ribs celery -- cut in 1"
1/2 lbBrussel sprouts -- fresh or
2 tbVegetable oil
1 cCorn -- fresh or frozen
1 cDried beans
Cubes
1 1/2 tsSalt
1 lgOnion -- chopped coarsely

Kenyan Bean Stew Preparation

Add beans to boiling water in a 3 qt saucepan or dutch oven; boil for two minutes. Remove from heat and let stand covered for one hour. Brown meat in hot oil; add onion and cook until brown. Add meat and onion mixture and all other ingredients (except Brussel Sprouts) to the beans; add one cup boiling water.
