Original recipe makes 6
1 tsSalt
1 Garlic; minced
1 tbChopped parsley
2 lbshoulder of lamb, boneless
6 smOnions; peeled
1 1/2 cDried Lentils
1 Onion; finely chopped
1/8 tsPowdered thyme
2 tbShortening
1/8 tsPepper
6 smCarrots; scraped and cut
1 Bay leaf
1/2 tsSalt
4 cWater

Lamb and Lentil Stew Preparation

Cut lamb into 2-inch pieces, add to shortening in heavy kettle; brown well. Add water, lentils, salt, bay leaf, parsley, chopped onion, carrots, and garlic. Cover, and simmer over low heat for 2 hours or until meat and lentils are tender. Add whole onions, thyme, salt, and pepper. Cover and continue to cook the stew until vegetables are tender.
