| 1/2 cDiced red bell or gypsy |
| 1/4 cMinced shallots or green |
| 1 Clove garlic; chopped |
| 1 lbGround beef |
| 1 tbChili powder |
| 1 cn(4.5-oz) ripe olives; |

| 1 mdOnion; chopped |
| 12 Corn tortillas |
| 1 tsSalt |
| 1/2 lbCheese; grated |
| 1 cn(8-oz) tomato sauce |
Layer Enchilada Preparation
Sauce ground beef, onion & garlic. Add tomato sauce, olives, salt, pepper & chili powder. Place tortillas, sauce & cheese, alternately, in a casserole dish, ending with cheese. Pour water over cheese. Bake at 400 for 30 minutes. Serves 6. BRENDA LANHAM From
