| 2 cElbow macaroni -- cooked |
| 1 tbRosemary |
| 1/4 cLemon juice |
| 1 cDried tomato bits |
| 1/4 cChicken Stock |
| xSalt and pepper |
| Drained and washed |
| 15 ozDark red kidney beans -- |
| 1/2 cOnions -- chopped |
| 1/2 tsSalt |
| 2 cFrozen corn -- thawed |
| 3/4 cFat-free mayonnaise |
| 1/2 cBell peppers -- chopped |
| 1/2 cTaco sauce |
| 1/2 tsCumin |
| 1/2 cFat-free sour cream |
| 1/2 tsVegetable oil |
Layered Southwestern Pasta Salad Preparation
Prepare elbow macaroni according to package directions. Drain and rinse under cold water; drain again. Toss with oil, cumin, and salt. Layer macaroni, beans, corn, bell peppers, and onions. Place in a 9 x 13" pan. In a mixing bowl, combine mayonnaise, sour cream, and taco sauce. Spread mixture evenly over top of pasta, sealing to edge of bowl. Cover tightly and chill overnight.
