2 cupsSpelt Flour
1 cupBob's Red Mill Kamut Flour
1 teaspoonNon-alum baking powder
1 1/2 cupsButtermilk; soy or rice milk
2 tablespoonsVegetable oil; (optional)
2 tablespoonsHoney; or natural sweetener

Spelt Kamut Buttermilk Biscuits Preparation

Preheat oven to 350 degrees F. Mix dry ingredients. Blend liquids and sweetener. Combine mixtures. Mix gently. Batter should be like thick oatmeal. (add 1/4 cup water if too stiff) Drop by round 1/4 cup onto oiled and floured baking sheet or large cast iron skillet. Bake 35 minutes or until golden brown. Makes 18. (Modified from Arrowhead Mills Quick Spelt Bisquits recipe.) Hint: Let the batter stand for 20 or 30 minutes for lighter bisquits.

Notes

The oven temp is set for a cookie sheet or baking sheet. If you use a cast iron skillet like I do, expect to turn the oven up to 370 - 375 degrees.
