1/4 tsSalt
2 cBran flakes
2 tbVegetable oil
1/3 cRaisins
1 Egg; slightly beaten
1 cFlour
1 cSkim milk
1 tbBaking Powder
1 1/2 ccarrots; Shredded
1 tsGround cinnamon
1/3 cBrown Sugar; firmly packed

Low Fat Carrot Cake Muffins Preparation

Preheat oven to 400F. Mix flour, baking powder, cinnamon and salt in large bowl. Mix cereal and milk in another bowl; let stand 3 minutes. Stir in carrots, sugar, egg and oil. Add to flour mixture; stir just until moistened (batter will be lumpy). Stir in raisins. Spoon batter into muffin pan which has been sprayed with vegetable cooking spray, filling each cup 2/3 full. These were amazing I just absolutely love them!!!!! They may sound gross but they are actually really good!!!!!! It's a great healthy tasty snack for you on the go!!!!
