Low-Fat Muffins
Ingredients
| 1 cRaisens |
| 1/4 cRaspberry preserves/jam* |
| 1 tsBaking soda |
| 1 lgbanana; Mashed, (or 2small) |
| IN A SMALL BOWL SIFT |
| 1 dsCinammon |
| 1/2 tsSalt |
| 1/4 cMolasses |
| IN A LARGE BOWL MIX WELL |
| 1/4 cUnsweetened applesauce |
| 1 cSoy/rice milk |
| 1 1/4 cFlour |
| 3 tsBaking Powder |
| 1/8 cBrown sugar* |
| 2 cRaw bran |
Low-Fat Muffins Preparation
Add to wet ingredients. Mix well. Pour into greased (I used Pam) muffin tins, bake at 400 degrees F for 20 minutes. *original called for 1/4 cup brown sugar. With the raspberry preserves, I find an 1/8 of a cup plenty. You could also sub raspberry with any other flavor of jam/preserve I would think. Im trying peach next time.
