Prep: 5 min, Cook: 5 min. Melt butter in a heavy nonstick skillet over low heat. saute onions 3-4 minutes until very soft but not brown. Stir in lox and cook 1-2 minutes. Add eggs. Turn heat to very low and gently stir until eggs are set. Serve immediately. This recipe serves 4 people.
