Original recipe makes 8
1/4 tsSalt
3 largemangoes; ripe, peeled, pureed
1 tsVanilla
1/4 cWalnuts; chopped
1/4 cRaisins
2 Eggs
1 1/4 cAll-purpose flour
1 1/4 tsBaking soda
1 1/4 tsCinnamon
1/4 ccoconut meat, shredded
1 cSugar
2/3 cVegetable oil

Mango Coconut Bread Preparation

In medium bowl, cream sugar, eggs and oil until thick. Sift together dry ingredients and add to creamed mixture, blending well. Stir in mango puree, vanilla, riasins, coconut and nuts. Pour into a prepared (oiled and floured) loaf pan 9x5-inch. BAKE 350F / 180C for 45 to 50 minutes. Makes 1 loaf. Cook on rack. Substitute 1 egg white and 1 whole egg. Easy and delicious. I replaced half of oil with applesauce.
