2 tbSoy sauce
2 tbCider vinegar
2 lbBoneless pork loin roast
Salt and pepper; to taste
2/3 cMaple syrup
3 tbDijon-style mustard

Maple-Mustard-Glazed Pork Roast Preparation

Stir together maple syrup, mustard vinegar, soy sauce, salt, and pepper. Spread evenly over pork roast and place in a shallow pan. Roast pork in a 350-degree oven until internal temperature measured with a meat thermometer, reaches 160 degrees, about 45 minutes to 1 1/4 hours. Remove from oven and let rest 10 minutes before slicing to serve. Serves 6 George R. McTyre mctyreg@baylor.edu
