Here's an easy way to enjoy taco soup with a choice of toppings
1. Cook beef or turkey, onions, and green pepper in 4 quart sauce pan over medium-high heat, stirring until beef is no longer pink (6-10 minutes) drain off fat
2. Stir in seasoning mix; continue cooking 1 minute. Stir in tomato juice and salsa. Continue cooking, stirring occasionally until heated through, 3-5 minutes.
3. To serve, ladle soup into individual bowls, dollop with sour cream, if desired. Top with other toppings as desired.
I bake organic corn tortillas and serve on the side.
