Original recipe makes 6
1/4 cfresh oregano; Chopped
1/4 colives; Ripe, chopped
1 cOnions; chopped
2 cPlum tomatoes; coarsely chopped
1 cBrown rice
1/2 cfresh basil; Chopped
1 19-oz canChickpeas
2 Garlic; minced
2 tsolive oil
1/4 tsSalt
8 ozRoasted chicken breast meat
2 tbWhite balsamic vinegar

Mediterranean Chicken and Brown Rice Salad Preparation

1. Heat olive oil in a large saucepan over medium-high heat. Add onion, and saute for 3 minutes. Set aside. 2. Cook brown rice according to package instructions. Mix with sauteed onion. Spoon mixture into large bowl. 3. Add tomato and remaining ingredients and mix well. Serve at room temperature or chilled.
