| 1/4 cUnsweetened applesauce |
| 2 tsBaking Powder |
| 1/2 tsGround cinnamon |
| 1/4 cFrozen egg substitute |
| 1/2 cNonfat buttermilk |
| Vegetable cooking spray |
| 1/4 cRaisins |
| 2 tbVegetable oil |
| 1/4 tsSalt |
| 1/4 cBrown Sugar; firmly packed |
| 1 1/2 cwheat bran cereal; Shreds |
Raisin-Applesauce Bran Muffins Preparation
Combine first 3 ingredients; let stand 5 minutes. Add brown sugar, egg substitute, and oil; stir well. Combine flour, baking powder, salt, and cinnamon; make a well in center of mixture. Add cereal mixture, stirring just until dry ingredients are moistened. Fold in raisins. Spoon batter into muffin pans coated with cooking spray, filling three-fourths full. Bake at 400? for 20 minutes or until lightly browned. Yield: 1 dozen (150 calories and 19% fat each).
