1 cCelery; diced
1 lgBell pepper; red or green,
1 tbThyme
2 tbButter
1/2 tsSalt
2 Cloves garlic; minced (up to
1/4 tsPepper
1 tbOregano
1 lgSpanish onion; diced
2 cWhole kernel corn
4 cVegetable stock
2 tbVegetable oil
1 tbPaprika
2 tbFlour
1 New Mexican chile; roasted,
3 cMilk or light cream
ROUX
FOR THE SOUP
3 cSweet potatoes; chopped
1 tbCumin
2 cGreen Fordhook lima beans;

New Mexican Succotash Chowder Preparation

Heres three recipes from "Lean Bean Cuisine" by Jay Solomon that I like. First you make a roux. (I love saying that.) Medium brown. Sautee onions, green pepper, garlic, celery, and chiles in oil for 7-10 minutes, until soft. Add stock, potatoes, spices and simmer for 20 minutes. Add lima beans, corn and milk.
