Nori Rolls
Original recipe makes 4 Servings
| 1/2 cCucumber, finely diced |
| 1/4 cDaikon radish |
| 1 tbTamari |
| 2 cCooked brown rice |
| 1/2 tbSoy "mayonnaise" |
| 3 Freshly chopped umeboshi |
| 1/2 cMung bean sprouts |
| 2 tsLemon juice |
| 1 tsDill weed |
| 1/2 cGrated carrot |
| 2 tbFresh parsley |
| 4 Sheets toasted nori |
Nori Rolls Preparation
Mix all but the nori sheets together. Let the mixture sit one or more hours to absorb the flavors. Set out the toasted nori sheets. Place 3/4 cup filling on each sheet of toasted nori. Roll tightly and cut into five slices.
