Original recipe makes 6
1 tbCornstarch
1 cPeeled; finely shredded
1 tbDark soy sauce
1 tsSugar
2 cFresh cilantro leaves,
1 1/2 tsSalt; to taste
1 lbFlank steak; sliced
3 tbShao hsing (rice wine)
1/2 cVegetable oil
1/2 tsWhite pepper
1 tbSesame oil

Real Ginger Beef Preparation

Marinate beef in corn starch, soy sauce, sesame oil, and pepper for 30 minutes, refrigerated. Meanwhile, in a bowl, toss ginger with salt and set aside for 20 minutes. Then squeeze shreds to extract most of the moisture. Set aside. Combine sugar and wine and set aside. Heat oil in skillet or wok to warm-hot temperature. Add meat, stirring to separate pieces. When pieces change color, remove them to a colander and drain. Some of meat may still be pink. Remove all but 3 Tb of oil from pan. Heat remaining oil; when hot, add ginger and stir rapidly for 15 seconds. Stir in cilantro and wine; cook just until dish is heated through.

Serve with rice. Good receipe I would modify the receipe a little and cut the meat into smaller pieces, and ensure that I only use the leaves of the cilantro. This was the first receipe that I have ever used needing so much Ginger (need a better way to prep), getting the ginger ready took a long time so be prepared.
