Ingredients

2 tb White wine vinegar
2 lg Garlic; minced
1/3 c fresh dill; Coarsely chopped
1/2 lb Feta cheese; crumbled
1/4 c sundried tomatoes; Minced
1 pt Yellow cherry tomatoes
Salt and pepper
1/4 c olive oil
1 lb Orzo pasta
1 sm English cucumber; peeled
1 sm Red onion; minced

Preparation

Boil orzo until just tender, about 8 minutes. Drain and transfer to a bowl. Add oil, sun-dried tomatoes, onion and garlic and stir well. When pasta is cool, add cherry tomatoes, cucumber, dill and vinegar. Add feta, salt and pepper and stir gently. Serves 8.
