Rinse fish and pat dry. In shallow dish, combine flour, cornmeal, onion salt, and pepper; set aside. Melt butter in shallow dish. Roll cod in butter, then in flour mixture. Place fillets in 8-inch square baking dish.
Drizzle remaining butte over fillets and top with grated parmesan cheese. Bake in a 450 degree oven for 12 to 14 minutes or until cod flakes easily when tested with fork.

JoeMaiers 3 months agoVery good & simple/quick. Might try some herbs next time but my wife says no. The fresh grated Parmesan makes it! Served with steamed acorn squash & au gratin potatoes

brianw101 12 months agoI might have used a little too much Parmesan, but it was a little soggy. I might try again and use the broiler the last few minutes.

kristinazieroff 2 years agoJust made this for friends the other night (one who doesn't eat fish) and everyone's plate was licked clean even the non-fish eater. Used garlic salt instead of onion salt but everything the same. Making it again tonight!
wewerebornready 2 years agoSimple and delicious! When I got home and found out I didn't have cornmeal, I went ahead and made it without, and it was still really good. Can't wait to try it with cornmeal!

NomadMan 2 years agoI made this last night for my wife and me. I had no onion powder, so I sprinkled in a little Mrs.____'s (can't recall the brand). Blah. Also, I got lazy and used cardboard Parm instead of grating some of the good stuff. Mistake. Fish was done perfectly, but I'll use the real ingredients next time!
