1 lbCod Fillet
2 tbFlour
2 tbCornmeal
1/2 tsOnion salt
1/8 tsBlack Pepper; ground
2 tbButter or margarine
2 tbGrated Parmesan cheese

Parmesan Baked Cod Preparation

Rinse fish and pat dry. In shallow dish, combine flour, cornmeal, onion salt, and pepper; set aside. Melt butter in shallow dish. Roll cod in butter, then in flour mixture. Place fillets in 8-inch square baking dish.

Drizzle remaining butte over fillets and top with grated parmesan cheese. Bake in a 450 degree oven for 12 to 14 minutes or until cod flakes easily when tested with fork.

    I made this last night for my wife and me. I had no onion powder, so I sprinkled in a little Mrs.____'s (can't recall the brand). Blah. Also, I got lazy and used cardboard Parm instead of grating some of the good stuff. Mistake. Fish was done perfectly, but I'll use the real ingredients next time!
