Original recipe makes 1
1 tsGround cumin
1 tsPrepared chilli
1 tsPeanut oil
1 Onion
1/4 cStewed apple; or canned apple
2 mdKumara
1 Garlic

Warm Kumara Dip Preparation

Peel kumara and cook in boiling salted water for 20 minutes or until tender. Drain well reserving 1/4 cup of cooking water. Peel onion and chop. Crush, peel and chop garlic. Heat oil in a frying pan and saute onion and garlic for 5 minutes or until clear. Add chilli and cumin. Place cooked kumara, reserved cooking water, onion mixture and apple in the bowl of a food processor blender. Process or blend adding 2 tablespoons of cooking liquid, until smooth. Serve warm with fresh vegetables or bread. NOTES : Makes about 2 cups
