1/2 cMargarine
1 czucchini; Grated
1/4 tsGround cloves
1/2 tsGround nutmeg
1/4 tsSalt
1 Egg
3/4 cHoney
2 cWhole wheat flour
1 cdates; Chopped, or raisins
1 tsBaking soda
1 tsGround cinnamon
1 cRolled oats

Zucchini Oatmeal Cookies Preparation

Cream margarine with honey. Add egg and beat well. Sift flour with soda, cinnamon, cloves, nutmeg and salt. Add flour mixture alternately with zucchini to egg mixture. Stir in oats and dates. Drop by teaspoons onto greased baking sheets. Bake at 375F 10 to 12 minutes.

These turned out cakey. They were good. I went light on the honey (ran out) so they weren't sweet, but a bit of homemade frosting took care of that problem. I used half regular flour and half whole wheat, but other than that I stuck with the recipe. I'll make them again, probably next summer when I've got too much zucchini around.
