Suggest a better descriptionPreheat the oven to Gas Mark 5/190 C/375 F. Lightly oil a 20cm (8inch) square ovenproof dish. Lightly fry the onion, pepper and garlic in the oil until soft. Add the tomatoes and simmer gently for 15 minutes. Stir in the parsley. Mix together the cheese and spinach. Place a layer of tomato sauce on the base of the dish. Cover with lasagne sheets. Place a layer of the cheese and spinach mixture on top and cover with more lasagne. Repeat the layering until all the ingredients are used, finishing with a layer of sauce. Cover the dish with foil and bake in the oven for about 45 minutes until bubbling.
