salt and pepper; to taste
2 Carrots; cut in chunks
1 cnChick peas; (300 gram )
1 tbolive oil
1 cWater
1 tsFinely grated lemon rind
1 cCauliflower florets
2 Zucchinis; cut in chunks
1 cnTomatoes; (400 gram )
1 Onion; cut in wedges
1 cnJohn West Tuna; (425 gram )
1 tsGround cumin
Couscous for serving
Chopped parsley for serving

Tuna Vegetable Couscous Preparation

1. Heat oil and fry onion until soft. Stir in cumin. Add water, carrots, cauliflower and lemon rind. Cover and simmer until vegetables are soft. 2. Add zucchinis, tuna, tomatoes, chick peas and seasoning. Simmer until hot. 3. Prepare couscous; according to pack directions. Serve tuna spooned over couscous, sprinkled with parsley. This was tasting very nice but the mixture was not perfect thus only a four. It is very good if you have an odd bunch of leftovers which I had now. :)
