Original recipe makes 1
2 1/4 cchicken broth
1/4 cBalsamic vinegar
1/4 tsDried red pepper; crushed
1 10-oz boxcouscous
1/2 colive oil
1/3 cfresh basil; Thinly sliced
Cherry tomatoes; halved
1 cplum tomatoes; Diced seeded
1 cGreen Onions; chopped

Tomato, Basil And Couscous Salad Preparation

Bring broth to boil in medium saucepan. Add couscous. Remove from heat. Cover; let stand 5 minutes. Transfer to large bowl. Fluff with fork. Cool. Mix all ingredients except cherry tomatoes into couscous. Season with salt and pepper. (Can be made 1 day ahead. Chill.) Garnish with cherry tomatoes. Serves 6.
