6 mdZuchinni; 1/4 inch slices
1/4 tsPepper
1 cnMushroom soup
1 lbGround beef
1 tsSalt
1/2 tsOregano
1 cCracker crumbs
1/3 lbCheddar cheese; grated
1 mdOnion; finely chopped

Zuchinni Squash Casserole Preparation

Boil zuchinni slices in small amount of water for 6 minutes; drain. While squash is cooking, brown ground meat; drain off fat. Combine with remaining ingredients. Mix well. Add squash and stir. Pour into greased 2-quart casserole or 2 1-quart casseroles. Options: Can use onion soup instead of onion, especially if more liquid is needed (some squashes are dry) and add no water at all. It was good, but a little on the squishy side (and I even added some extra bread crumbs to this!), I also baked it in the oven @ 350 for a good 10min or so which gave it crunchy edges (I think that helped a little). I would make again but I'll probably change it around a little until I find the right taste AND texture.
