1 1/2 cjack cheese; Shredded
1 10-oz packagespinach; chopped, thawed
1/2 cCheddar cheese; shredded
1/2 cFeta cheese
1 pkFrozen puff pastry
1/2 cyellow onion; Diced
3 Eggs
Salt and pepper
1 cHeavy cream
1/2 croasted red peppers; Chopped

Three Cheese And Spinach Quiche Preparation

Directions: On a lightly floured surface, roll out 1 sheet of thawed frozen puff pastry to 1/4 inch thick. Place in a 9" pie plate and fold the edges under. Prick the pastry with a fork, then bake at 400 degrees for 10-12 minutes. Let cool. Sprinkle the onion, jack cheese, and cheddar cheese into the baked pastry shell. In a mixing bowl, combine the thawed spinach, cream, eggs, salt and pepper. Mix well. Pour the mixture over the onion and cheese. Top with the red peppers and feta cheese. Bake uncovered at 350 degrees for about 50 minutes until set. Let cool slightly and serve.
