| 8 tbUnsalted butter; (1 stick) cut up |
| 2 tblime juice; Freshly-squeezed |
| 2 tbShallots; minced |
| 1/2 cWhite tequila |
| 3 Turnsblack pepper; Freshly-ground |
| 1 tsGarlic; minced |
| 1/2 tsSalt |
| 1 tbFresh Cilantro; chopped |
| 1/4 cHeavy cream |
Tequila Lime Sauce Preparation
Combine the tequila, lime juice, shallots, garlic, cilantro, salt and pepper in a saute pan over high heat and bring to a boil. Reduce by half. Stir in the cream and simmer for 3 minutes. Whisk in the butter and remove from the heat. Continue whisking until all of the butter is incorporated. Serve immediately. This recipe yields 1 cup of sauce.
