| 1 tbFat free cheddar cheese |
| 3 Chicken breast; no skin, no bone |
| 1 tbTortilla chips; crushed |
| 1 lgZucchini squash; cubed |
| 2 cnChicken broth; fat free |
| TO SERVE |
| 2 cnStewed red ripe tomatoes |
| 2 cWater; if needed |
| 1 lgYellow squash; cubed |
| 1 cnGarbanzo beans; drained |
| 1 cBaby carrots; whole |
| 1 tbFat free sour cream |
| 5 Clovesgarlic; peeled |
| 3 Stalkscelery; sliced |
Teris Tortilla Veggie Soup Preparation
Put all ingredients into crock pot. Turn on low (or auto) and leave all day. Come home to a hot bowl of soup. I serve it over some low fat cheese and add some crumbled WOW chips (fat free). Also a dollop of fat free sour cream is great and cuts the heat if its too hot for you. Warning - if you use the extra hot Rotel, it will be SPICY!
