Szechwan Beef
Original recipe makes 4
| 2 tbPeanut oil |
| 1 tbVinegar |
| 1 lgcarrots; Or 2 small, finely sliced into 1/8"; matchstick strips |
| 1 tbBlack bean sauce |
| 1 tsSugar |
| 1 Scalliion; quartered, then into; 3" strips |
| 2 tbHoisin sauce |
| 1/4 tschili paste; To 1/2 tsp |
| 1 lggreen peppers; Or 2 small |
| 2 tbDry sherry |
| 1 lbBeef (round); (round or chuck); cut into fine slivers or strips; 1/8" |
| Hot cooked rice |
Szechwan Beef Preparation
Heat oil in wok and stir-fry the green peppers, carrots, and scallion for 1 to 2 mins. Push aside. Stir-fry the slivers of beef for 1 to 2 mins and recombine with vegetables.
